Last Spring I traveled to Southern California for a chiropractic seminar, and was fortunate enough to visit True Food Kitchen which is co-owned by Andrew Weil, MD. The menu and food was amazing! Following the seminar I was gifted the True Food Kitchen cookbook! The first recipe I made was the Umami sauce, it was delicious! The Umami Sauce is great as a vegetable dip, dipping sauce for chicken, and with a bit more olive oil added to the recipe, is a great dressing for salad.  I used it recently when roasting a head of cauliflower, brushing it on the cauliflower before roasting. The Umami sauce has become a staple in our house! I hope you enjoy it as much as my family does!

Ingredients

1/4c Apple Cider Vinegar
3tbsp Tamari
1/4c water
1c Nutritional Yeast (not brewers yeast)
8 cloves garlic
Salt (optional)

Directions

Put the ACV, Tamari, Water, Yeast Flakes and Garlic in a blender until well combined. Remove the feed tube while blending and slowly add olive oil. Blend well until mixture becomes thick, like mayo. Add salt to taste. Refrigerate for up to 2 weeks. Bring to room temp and shake before using as either a sauce on fish or chicken or as a dip for veggies. Enjoy!
