Sautee green and red or yellow bell pepper and set aside. Once cooled chop for soup mixture.
Sautée 3/4 yellow onion and 3 cloves of garlic for 1-2 min.
Add 1lb ground beef and cook until browned.
In a pot add:
1 16oz can tomato sauce
1 16oz diced tomatoes
The sautéed peppers
3 1/2 cups of chicken broth
Once ground beef is browned add the beef and onion mix.
Add 1 tsp oregano
Add 1 tsp cayenne pepper
Add 1/2 tsp garlic powder
Splash of Apple Cider Vinegar
Salt and pepper to taste
Cook on med low for 25 min, add one bag thawed riced cauliflower and cook for an additional 7 -10 minutes. Makes 8-10 servings.
