Breakfast Burrito

Ingredients

  • 2 Eggs
  • 1 TBSP jalapeno, diced
  • 1 stalk green onion, diced
  • 1 Turmeric flavor Raw Coconut Wrap (available at Alameda Natural Grocery or Amazon)
  • 1-2 TBSP Salsa(sugar free)
  • Salt and Pepper to taste
  • Oil olive or coconut oil

Directions

Heat the oil in a skillet over medium heat. Beat the eggs so the yolk and white mixes well.  Add to the skillet along with the jalapeno, green onion, salt and pepper. Gently stir until cooked.

Fill the wrap, top the egg with salsa and roll tucking each end in.  (The wrap softens when warm filling is added)

Makes 1 serving!
