Breakfast “Sandwich”

2 Eggs

Dash of Salt and Pepper

Dash of garlic powder or smoke paprika(optional)

Olive oil or oil of choice

2 Round Egg Molds or Large Mouth Mason Jar Lids


Place the molds or mason jar lids in a non stick skillet and spray the molds and pan with oil. Heat on medium low heat until hot. Beat the eggs well and season with salt, pepper and garlic powder or smoked paprika. Add the eggs to your molds and cook for a minute. Add 1Tbsp water to the pan (being careful not to get into the eggs) and cover with a lid to cook an additional 3-4 minutes until set. If using mason jar lids you may see a little of the egg leak out, you can cut this part off.


Using a spatula, transfer to a plate or flat surface and remove molds. Fill with ingredients of choice.

Makes 1 serving.


Filling for the picture above: bacon, cheese, spinach (cooked and excess liquid squeezed out), tomato and basil pesto.
