Cauliflower “Hashbrowns”


  • 2 eggs
  • ¼ cup diced white onion
  • Salt & Pepper
  • Stalk of green onion, chopped finely.


Preheat oven to 400°.

Thaw a bag of frozen riced cauliflower (Trader Joes). Strain thoroughly with a tea towel. Add 2 beaten eggs and onions to the cauliflower and generously season with salt and pepper.

Spoon mixture onto parchment paper and form into rectangular patties , I found parchment paper gave the golden color. Bake for approximately 12 to 14 minutes.
Flip once and bake an extra 2-3 minutes.

Makes 4-5 Hashbrowns.
