Chicken Chow Mein

1lb Chicken Thighs, cubed

1 Spaghetti Squash

2 Cloves garlic, minced

¼ Yellow Onion, chopped

2C Trader Joes Healthy 8 Chopped Veggie mix, remove the carrots

¼ TSP Black pepper

½ TBSP Stevia

2 Squeezes of Ginger Paste or 2 TSP Grated Ginger

1/4C Tamari

 

Cut the Spaghetti Squash in half length wise, scoop out the seeds and bake at 425* for 45 minutes. Once done, set aside to cool. After cooled, scoop out the flesh with a fork. Set aside.

In a large skillet cook the cubed chicken on medium.

While the chicken is cooking, whisk together the tamari, garlic, ginger, stevia and black pepper in a small bowl. Set aside.

Once the chicken is done cooking add the Healthy 8 chopped mix(carrots omitted). After sautéing for 3 minutes add the yellow onion and cook for 3 more minutes.

Add Spaghetti Squash and mix well.

Transfer to a large mixing bowl. Add the sauce and mix well. Enjoy!
