Chicken Fried “Rice”


  • 1 1/2lb chicken tenders, cubed
  • 1 bag FRESH riced cauliflower
  • 1/8 tsp ground ginger
  • 2 Tbsp green onion
  • 2 eggs
  • 1/2 cup chopped red pepper
  • 1/4c tamari sauce
  • Pinch of red pepper flakes
  • Pinch of salt


Heat lightly oiled skillet over

Medium heat and cook the

cubed chicken. once thoroughly

cooked, set aside.

Add the riced cauliflower, soy sauce ginger and garlic and red pepper and cook for 4-5 minutes, stirring throughout. Add chicken and create a circle in

the center of the pan, add the 2 eggs and

scramble. Once scrambled, mix everything together.

Top with green onion and serve.
