Chicken Salad

2lbs  Chicken Tenders or Skinless Breast

1/2 Yellow Onion, sliced into thirds

1-2 Bay Leaves

1/2 Sm Red Onion, finely chopped

2-3 Celery Stalks, finely chopped

2 Green Onion, chopped(green and white)

1/2-1 Jalapeno, finely chopped

4 TBSP Garlic Fluff(or Trader Joes Garlic Spread)

3-4 TBSP Mayonnaise

Salt and Pepper

Splash of Lemon Juice

 

In a large pot cover the chicken and onion with water and season generously with salt. Bring to a boil, lower heat to medium low, cover and simmer for 5 minutes. Remove from heat and let stand covered for 8-15 minutes until chicken is cooked through. Cooking time will vary depending on size of chicken used.

Set chicken aside and let cool.

Once cooled shred the chicken discarding any tendons and tough bits. Mix with the red onion, celery, green onion, jalapeno, garlic fluff, mayo, salt, pepper and lemon juice.

Mix well and Enjoy!
