Shrimp and Cucumber Noodle Salad


  • 1 bag Trader Joes Argentinian Frozen Shrimp(thawed)
  • 1 English cucumber, peeled
  • ¼ Red onion, sliced
  • 2TBS Olive oil
  • Salt and Pepper to taste
  • Crushed red pepper
  • 3TBS Apple Cider Vinegar


In a skillet sauté the shrimp in olive or coconut oil. While cooking, season with crushed peppers, salt and pepper. The shrimp are done when they turn pink, generally 5 minutes. Make sure to not overcook!

Spiralize the peeled cucumber.

Mix the cucumber noodles, red onion, ACV, olive oil, garlic salt, salt and pepper. (optional: adding in chili lime salt or crushed red pepper)

Top with the cooked shrimp.

Makes 3-4 servings.
