Egg “Tortilla”

2 Eggs

Dash of Salt and Pepper

Dash of garlic powder (optional)

Olive oil or oil of choice


This works best in a 12” non-stick skillet. Lightly oil and heat your skillet on medium low heat until hot. Beat the eggs well and season with salt, pepper and garlic powder. Add the eggs to your HOT non-stick skillet and rotate pan so the eggs evenly disperse to the size of the skillet.

Cook for 2-3 min until set.


Transfer to a flat surface and fill with ingredients of choice. Roll tightly and cut in half. Makes 1 serving.


Filling for picture on the left: ham, cheese, red onion, greens and hot sauce.


Filling for picture on the right: bacon, cheese, sun-dried tomato, basil pesto and hot sauce.
