Golden Sea Scallops & Asparagus with Fresh Garden Herbs
8 large sea scallops
2 tablespoons grape seed oil
2 teaspoons minced fresh garlic
1 tablespoon finely chopped thyme
4 cups asparagus, tough ends removed
1 tablespoon finely chopped fresh parsley
½ tablespoon finely chopped fresh basil
Salt and pepper to taste
Scallops– In a medium bowl, marinate scallops with 1 tablespoon oil, garlic, thyme, salt and pepper, to taste, for 20-30 minutes. Sear scallops over medium- high heat for 1 ½ minutes on each side. Do not let the scallops touch one another, scallops are finished when the middle is still translucent and the top and bottoms have a golden crust.
Asparagus– Blanch asparagus to retain crispy tender consistency and asparagus has turned bright green. Combine parley, basil, pepper, and 1 tablespoon oil. Drizzle mixture over asparagus, and sprinkle additional pepper and salt, to taste.
