The Ideal Protein® Rotini is a non-restricted favorite that can be enjoyed plain or in a tomato basil flavor.  One packet contatins only 7 net grams of carbohydrates and packs a powerful punch with 20g of protein!

Ingredients

Ideal Protein® Rotini
1c chicken stock
1c cherry tomatoes, halved
1tbs oregano
1/2c sliced mushrooms, halved
1 garlic clove, minced
1/4 of a leek, sliced
*1tbsp crushed red chili (optional)
Sea salt to taste

Directions

Combine in saucepan and cook on low for 2 hours, until vegetables are soft. *For variety I sometimes add 1 cup of kale. When you are ready to enjoy add the cooked Ideal Protein® Rotini. Boil the rotini for 10-12 min. If I am planning on taking this soup to work the next day I cook the rotini the night before and heat the soup and the rotini together in the morning. This makes one serving. Enjoy!
