Keto Pancakes

1/4C Heavy Whipping Cream

3 Eggs

1/4 Quality Butter, melted

1/4c Coconut flour

1 TBSP Cinnamon

1/2 TBSP Vanilla Extract

1 1/2 tsp Monk Fruit Sweetener

1/2tsp Baking powder

Coconut Oil

 

In a mixing bowl combine the egg, melted butter, heavy whipping cream and vanilla extract and mix well. In a separate bowl combine the coconut flour, baking powder and cinnamon.

Add the dry mix to the wet mixture and mix together.

Heat a non stick skillet with coconut oil, pour batter into 3 or 4in circles. Cook for 3-4 minutes, flip and cook an additional 2 minutes.

Enjoy!

Makes 8 pancakes, a serving is 2.
