Mushroom Garlic and Spinach “Rice”
1 Bag Fresh Riced Cauliflower
3C Mushrooms, diced
½ Small Onion, diced
1C Parsley, chopped
3½ C Spinach
3-4 Cloves garlic, minced
Olive oil or Grape seed Oil
Dash of Crushed red pepper-optional
Salt and Pepper to taste
Combine the spinach and parsley in a large bowl and set aside. In a skillet saute the garlic and mushrooms for 4 minutes, add the onion and cook for an additional 3 minutes. Add the Cauliflower and crushed red pepper, salt and pepper and cook for 5 minutes uncovered then cover and cook for an additional 10 min. Once done cooking add the cauliflower and mushroom mixture to the spinach and parsley and mix well.
Enjoy! Serves 4-5. This makes a great side and also a great breakfast with egg!
