Pepper “Nachos”

1lb Ground beef

1 bag of mini bell peppers or 2-3 red and yellow bell peppers, halved and de-seeded.

1/2C Tomato, chopped

1tsp Ground Cumin

1tsp Garlic powder

1tp Cayenne powder

1tsp Oregeno

salt and Pepper to taste

1/4C red onion, diced



Preheat oven to 325. Brown the ground beef, once cooked through add the cumin, garlic powder, cayenne, oregano, salt and pepper. Mix well and cook for an additional 3-4 minutes.

Fill the peppers with the beef mixture(if using cheese you would also add) and bake for 10-15 minutes.

Remove from oven and top with red onion, tomato, cilantro and hot sauce.

Serve immediately. Makes 4 servings.
