1 bag of frozen cauliflower rice, thawed and strained thoroughly
¼ cup diced white onion
Salt & Pepper
Stalk of green onion, chopped finely
cooked bacon, diced jalapenos, chives, sage, minced garlic, crab meat, diced fennel, etc.
Salsa, Pepper Plant Chunky Garlic Sauce, Lemon Juice
Mix eggs, green onion and cauliflower rice together. Add salt and pepper and whatever add-ins you’d like. In a frying pan, heat 1 tbsp. olive oil or grape seed oil on medium-low to medium heat until hot. Spoon the batter into the pan and fry 4-5 minutes on each side or until golden brown. Add toppings and serve. Serves 2-3.
