Spicy Chicken Ramen Soup
This chilly weather has kicked my craving for a good spicy noodle soup in overdrive! Last month I made a vegetable soup using the ideal protein rotini but my recent craving has been for a Pho-like soup which made me think of the tofu shiritaki noodles! Cooking this soup in the crockpot makes this soup so easy and so delicious!!
5-6 chicken boneless skinless thighs
7 cloves garlic
1 leek sliced
1tsp fish sauce
Pepper plant garlic sauce
1 bag tofu shiritaki noodles, drained and rinsed Green onion chopped Cilantro chopped
Salt and pepper
In a crock pot add chicken thighs, water, cloves of garlic, mushroom, leek, fish sauce and cook on low for 6 hours. After 6 hours add salt, pepper and the garlic pepper plant sauce, to taste depending on your tolerance to heat, and cook on low for another hour. Add shiritaki noodle, cilantro and green onion. Stir and serve.
