Breakfast Bake


  • 4 Eggs, slightly beaten
  • 8-10 Cherry Tomato, sliced
  • 1 Green Onion, chopped
  • 1C Mushroom, sliced
  • 3-4 Brussels Sprouts, leaves removed
  • 3-4 Bacon Slices, cooked and chopped
  • 2TSP Garlic Salt
  • 1TSP Cayenne
  • Salt and Pepper


Preheat oven to 400*. In a skillet, cook the mushrooms in olive oil for 5-7 min until browned. Remove and set aside.

Cook the brussels sprout leaves for 4-5 minutes, or until they turn bright green. Set aside.

In a bowl combine the tomato, green onion, bacon, mushrooms and brussels sprout leaves. Add in the garlic salt, cayenne powder, salt, and pepper and mix well.

Add the mixture to a non-stick 5 1/2 X 8 baking dish. (If not using non-stick coat lightly with olive oil)

Top with the beaten egg and bake for 30-35min.
