Breakfast Hash *Maintenance Phase*


  • 6-8OZ Butternut Squash Zig Zags (I used Trader Joes version)
  • 8 Cherry Tomatoes, halved
  • 1/2C Mushroom, sliced
  • 2-3 Garlic cloves, minced
  • 3 Bacon Slices, chopped
  • 4 eggs any style
  • Sm Handful of Microgreens or arugula
  • Salt/Pepper
  • Dash of crushed pepper


In a skillet cook the bacon for about 7min. Add the garlic and cook until fragrant, add mushroom, butternut squash salt, pepper, crushed red pepper and sauté on med heat for 7 min until tender. Add the tomatoes and cook an additional 3-4 minutes.

While the hash is cooking you can start your eggs.

For the over easy eggs shown.

Add 1-2TSP olive oil or ghee to a small non-stick skillet. Crack your eggs, salt, and pepper and cook on low for about 5 min and flip. cook for 30 sec and remove the eggs from the heat.

Plate the hash and top with your egg of choice and micro greens or arugula.
