- 1 head Cauliflower, cut or broken into small pieces
- 1/2C Celery stalks halved lengthwise and sliced thin
- 1 White Onion, diced small
- 1/2C Mushroom, chopped
- 3/4lb Chicken Sausage, cooked and diced (breakfast sausage works great)
- 2-3TBSP Rubbed Sage
- 1TBSP Thyme, dried
- 1TBSP Rosemary
- 1TBSP Garlic Powder
- 1TBSP Salt
- 1/2TSP Pepper
- 6TBSP Parsley, chopped
Optional add-ins depending on phase: chestnuts, pecans, cranberries
Preheat oven to 400* and line baking sheet with foil and spray with oil of choice. (you may need 2 baking sheets). In a mixing bowl combine the vegetables, olive oil and all seasonings except the parsley and mix well.
Spread the mixture evenly onto your baking sheet and bake for 12-13 min until the cauliflower is tender. Add the sausage and 3 TBSP parsley and mix well. Bake for an additional 10-12 minutes.
Top with remaining parsley. Serves 6-8. Enjoy!
