English Muffins

4TBSP Coconut Flour

2 Eggs

Pinch of Baking Soda

Pinch of Salt

Coconut Oil

 

Preheat your oven to 400*. Grease 2 6oz ramekins with coconut oil(make sure to grease well). In a bowl mix the coconut flour and eggs. Add the pinch of baking soda and salt.  Pour the mixture into the greased ramekins and bake for 20-25 min until a toothpick is clear.

Let cool and carefully slice in half. To brown the edges heat 2-3 TBSP coconut oil in a skillet and brown the muffins for 1 min. Don’t brown too much as it can dry out the muffins.

These are great with over easy eggs!

Makes 2 english muffins. Enjoy!
