- 3lb Pork Shoulder, cut into cubes
- 3C Chicken Stock
- 3-4 Garlic cloves, crushed
- 2TSP Cumin
- 2TSP Cinnamon
- 1 Lemon, juiced
- 1/2 Yellow Onion, chopped
- 2 Bay Leaves
- 1TBSP Tamari Sauce
- Salt and Pepper
Place the pork cubes into the inner pot and generously season with salt and pepper. Add the onion, garlic, bay leaves, tamari, cinnamon, cumin and lemon juice. Mix well and let sit for 15-20 minutes.
Add the chicken stock and close the lid. Cook on high pressure for 30 minutes and let the steam naturally release.
While waiting for the release turn on your broiler.
Transfer the cubes to a baking sheet. Add additional salt if needed and drizzle the cubes with the liquid. Broil for 4 minutes to crisp the pork. Flip your pork cubes and drizzle with more juice and broil for 4 minutes.
Shred the cubes with forks and serve. This is great on salads, on cauliflower tortillas or as lettuce cups.
